Inspired by the popular Erewhon kale salad with white beans, creamy avocado and a handful of seeds for healthy fats we have created a recipe you can easily make at home.

Ingredients
For the Salad

200 g kale, stems removed and finely chopped

135 g canned cannellini beans, rinsed and drained

½ avocado, sliced or cubed

1 tbsp pepitas (pumpkin seeds)

1½ tbsp hemp seeds

Salt and pepper to taste
For the Skin Therapy Dressing

1 tbsp olive oil
-
1 tsp Dijon mustard
-
1 tsp water
-
2 tsp Skin Therapy

1 tsp fresh lemon juice

½ tsp vinegar (apple cider or white wine vinegar both work)
Instructions

Prep the Kale
Add the chopped kale to a large mixing bowl with a pinch of salt. Massage the leaves gently with your hands for 1–2 minutes until they soften and deepen in color. This helps break down the natural fibers and makes the kale more tender and digestible. -
Make the Dressing
In a small bowl or jar, whisk together the olive oil, Dijon mustard, water, lemon juice, vinegar, and Skin Therapy until fully combined and smooth. Season with a little salt and pepper if desired. -
Assemble the Salad
Toss the massaged kale with the cannellini beans, avocado, pepitas, and hemp seeds. Drizzle the Skin Therapy dressing over the top and toss gently to coat everything evenly.
